Making Keto Steak & Zoodles with Cece’s Veggie Co.

Making healthy food choices is consistently a challenge for me so I’m always on the hunt for great new recipes that are healthy and macro-friendly. I stumbled across a recipe from Mom Secrets on Pinterest for low carb & Keto steak bites with zucchini noodles. Try the recipe for yourself here. This reminded me of a dish my mom makes called beef tips and noodles so I thought I’d give it a try.

More than anything I love how quick and convenient this meal was using Cece’s Veggie Co. Noodled Organic Zucchini noodles from Kroger. I am a huge fan of zucchini noodles and buying them already spiralized is a huge time saver and great for meal prep. I love keeping pre-cut or prepped veggies in my fridge for a quick addition to any meal. As someone who struggles to stay on the healthy eating train, convenience is key to creating healthy habits.

Mom Secrets’ recipe did not disappoint! It takes 30 minutes or less – if you have all the ingredients at your house – which most people do. I might opt to marinate the beef overnight just so it’s ready to go the next day when it’s mealtime or whenever you’re scheduling your meal prep for the week.

  • Marinade:
    • I marinated the beef for about 30 minutes while I went to Kroger to pick up some more Cece’s Veggie Co. zucchini noodles. I wish that it would have been a longer marinade – just to punch up the flavor a little more.
  • Taste:
    • The dish was delicious and rich – thanks to that 1/4 stick of butter. It was really tasty and I liked the crunch from the zoodles. I opted to keep my zucchini spirals raw.
  • Time:
    • Preparing the marinade took about 10 minutes, 30 minutes for the beef to marinate, 20 minutes to Kroger and back for the noodles and 20 minutes to cook. All-in-all, this was a super quick and convenient meal to prepare.
  • Tip:
    • If you’re on strict keto, swap out the soy sauce for coconut aminos and you’ll still get that great Asian zing in the dish.

One package of the zucchini made 4 meals for our family or 4 meal preps. Assuming that most people have the ingredients to make the marinade in their home, the only items to purchase are the steak & zucchini spirals.

At Kroger, the ingredients cost $12.50 which breaks down to $3.13 a meal. A fantastic dish, on a budget, that’s definitely getting added into my meal prep rotation.
